I have made the style for this forum, trying to get it to look winey (if that is a word).

Is there any way that I could get it more optimised for the keywords "wine forum" or "wine forums"?

Hello wineo.
It looks OK for your KW.

One paramater, E.G. viewtopic.php?t=38, shouldn't be any problem. Just make sure SE spiders aren't served session ID's.

I checked overture and your KW, "wine forum," doesn't receive much traffic.
You probably should expand the number of KW that you are targeting.
Searches done in September 2004: 247
http://inventory.overture.com/d/searchinventory/suggestion/

You could easily add meta keyword and descriptions.

I registered and looked around. The useability is fine.

Does the forum software/script allow you to have a quote or a complete post show up on the home page? I mean dynamically, maybe even random. (Or you could choose one now and again, pick one that reads well AND contains useful keywords). Presenting a "snippet" like that could make your home page a bit more inviting, add a bit more content, make it worthwhile to like to for info alone, and make it appear "fresh" to bots.

It's just that I feel a simple list of subforums, with little or no real text to read, doesn't really trigger a click reaction...

Winey style is just right BTW...

Hmmm, that sounds like a good idea! You don't think that it would make it too cluttered? I suppose if it is good for the SEs then it is worth while!
