301 - permanent redirect. Tells the search engine that the page has permanently moved, never to return. Passes all link juice to the new page. The 301'd page is removed from the search engine index, to be replaced with the new (though not necessarily in the same place in the search results).
302 - temporary redirect. Tells the search engine that the page will return at a later date. No link juice is passed to the new page. The 302'd page remains in the search engine index but displays the title and description related to the new page (i believe - someone please correct me if I'm wrong).
