I just learned there is an attribute for the table tag called summary, will search engines pick up this text?

Test it to be sure. Make (or adapt) a page with a specific text phrase in the content, and another in the summary. Then you can at least see if the text is INDEXED (and worry about the value later).
If you have a PR7+ page you can have the results within a day ;) ;) But yes - perhaps someone here has tested it already. {waiting for report of that}
