question about redirecting
If you use a 301 redirect in your .htaccess file in website 1 and direct all traffic to website 2, will the pages from website 1 still get listed in google if you keep updating them. Or do they get dropped from the index.

A 301 is a permanent redirect. Google will think that the content on 1 is old (even if it is update) and it will ignore that content.

Is there another sort of redirect that is temporary that tells google to index still

a 307 redirect is temporary. about Google indexing.... I don't know.
