I would do lots of niche sites but i am looking to limit the amount of domains i buy until the income increases. I do have a small niche site which makes money over the last year but its so small its so targetted the traffic amount hasnt gone up much over time.

Proper title tags and meta descriptions can really help your long tail keyword rankings, also proper on-page content structuring with heading tags is a plus in that field. It possible but there is room to fail, honest is the best policy.
