More traffic over time?

Hello, hope this makes sense......

I am looking to create 2-3 sites of on average 20-40 pages on a particular area.

As the sites will be new i realise i wont get many longtail keyword traffic at first but does this grow over time? I was looking to have 500-1000 words on the index page of good content and its internal pages with 300 or so words

I think i know the answer but not totally convinced so would like some opinions from here if thats ok

I would do lots of niche sites but i am looking to limit the amount of domains i buy until the income increases. I do have a small niche site which makes money over the last year but its so small its so targetted the traffic amount hasnt gone up much over time.

Longtail grows over time only if you keep adding content.

Proper title tags and meta descriptions can really help your long tail keyword rankings, also proper on-page content structuring with heading tags is a plus in that field. It possible but there is room to fail, honest is the best policy.
