When you migrate the site, the URLs for the pages of the site are most likely going to change. So, you need to setup 301 redirects redirecting the old URLs to the new ones. If you don't, then you will loose all the authority and rankings of the old pages plus any external links that were pointing to those pages will be broken and any bookmarks people may have saved will also be broken. The best option from an SEO and user standpoint is redirect each individual old page to it's corresponding page on the new site (or most relevant page). By doing so, you will transfer the authority of each old page to the new one and rankings should remain pretty consistent (no guarantees, though) With ecommerce sites, however, it can be a daunting task if you have thousands of product pages, description pages, etc. So, you may have to balance how feasible/cost effective it is to redirect each individual URL versus redirecting entire categories/directories.

You'll also want to make sure you don't loose any on-page optimization. So, make sure your title and meta tags aren't changed (or are improved) and make sure the content of the pages remains the same (or is better optimized). One thing to watch out for is how the new web builder tags the content on the pages compared to how the old one did. For example, if the old site put all the product names in an h1 tag and the new site just uses a p tag and bolds it, then you'll loose some optimization. So, as much as you can (and you may be very limited in this) try to make sure the content tagging is similar or better.

Site migrations are a pain, but it's important that it's done right or much can be lost.
