Coming Back to SEO, Questions on Taxonomies

I have been out of the website game for a few years, and I am trying to educate myself on SEO once again just for a little project some friends and mine are doing.

We bascially have a wordpress blog using the Yoast SEO plugin. We post podcasts, reviews, and Opinion pieces on video games.

When it comes to taxonomies, should i exclude things like categories, tags, format, project categories etc?

Our site will never use any of those things except some categories and tags to keep things neat. But less than 10 categories and maybe 20 tags in the end.

I tried googling this but couldnt get a clear answer when I want to exclude those things and when i dont want to.

Nowadays the ethos is "build for users, not for search engines"...
So if you think a dozen or so categories and maybe 20 tags will make the thing work best, that's what you should do.
