Changing my content (Bad for my PR?)
Once I've submitted my website, is it OK to update or change the content on the site or will this affect my page ranking PR.

No, of course
Changing contents will not affect your PR. Even more, the top PR sites are updated daily or hourly.
The contents, obviously, determines the search results: if you keep out your article about The man in the moon, i.e., and the googlebots don't find it, a month later you'll never appear more with your article about The man in the moon. Easy and logic.

change your content
As noted above, changes of content are regarded well by Googlebot.
If this were not true Microsoft would have a PR of 0 as would Yahoo and DMOZ. Cheers ! |

Yep - Changing the content won't affect PR directly .. but the rankings may vary depending on the changes made!!
The only way you would change the PR in any way would be if you were to change the linking structure in some major way.
