Well based on that I'll assume you don't have a great understanding of SEO. Meta tags will provide very little if anything in terms of you SERP performance, the only thing they will do is help your CTR.
If your ranks are fluctuating so much then it's either because you're a very new site and it will normalise soon. Or your competition are working hard to out perform you, so you'll need to work smarter to rank above them.
You need to either spend alot of time learning and implimenting SEO changes or hire someone to advise you and help you rank well.

Also, when you check your Google ranks be sure that you are not signed in to Google or you will get personalized results. When you see yourself at #3 try adding &pws=0 to the end of the url that Google puts out and see if you are still there.

meta tags does not do much stablizing.
where do your sites disappears to? if they disappear to a very high Google rank, it could be that you are over-optimizing.
are you using the exact same anchor text for your back links?
if so, it looks unnatural to Google, and Google may have penalized your website.
to fix this, use different anchor text in the future. your rankings will return sooner or later.

Yes. Seriously do watch the over-anchoring thing. I think I posted one of my experiments on that a few years ago in this forum. I was interested to know just where the line was for anchor text diversity. I found that it was fairly easy to trigger an "unnatural anchor profile penalty" (or whatever you want to call it).
