Should I include a list of all images on my site in my google sitemap?

well technically www.site.com/image.jpg is actually a URL so there may be some value in it, however an image by itself has no reference to it's content, so not sure what the SE would make of it

I think that images are most useful in connection to their context on a page. Thus, save yourself the effort to list them in your sitemap, Google will find the images sooner or later anyways as long as they appear on your site.
