Should I include a list of all images on my site in my google sitemap?

And if so, how?

Sitemap is about listing URLs, not about listing the content.

well technically www.site.com/image.jpg is actually a URL so there may be some value in it, however an image by itself has no reference to it's content, so not sure what the SE would make of it

So the answer is no?

I had about 120 images listed in google images then all of a sudden they all went - well all bar 9. Will google find these again?

I think that images are most useful in connection to their context on a page. Thus, save yourself the effort to list them in your sitemap, Google will find the images sooner or later anyways as long as they appear on your site.
