Everywhere I see the <link rel="canonical" is used but I have a website with <link rel='canonical'

No it won't matter, and just for peace of mind run it past the W3C Validator to check it passes.
Use double quotes for canonical tag in website.
If you have any concerns regarding the code you can check it out with W3C validation.
If the code is correct and there are no other issues in the website than you will pass the test.
If not than it will show you the errors and warnings if any..
Well,I have been using double quotes for the canonical tags in my websites.
But not sure if putting a single quote is an issue.
Moreover as suggested by Raviraj and tstolber checking it out with the
W3C Validation would be helpful.
