If you use images, always make sure you set the alt tag and it can also be of a benefit to include keywords in your filename. However, the benefit you get from this overall is very little, so be realistic about what you can achieve. Going through your entire site and adding images with alt text is not going to suddenly get you to no. 1.
My advice would be, add the images if it makes sense to do so, as your first thought should be providing good content and a good user experience for your audience. If you are doing it solely for the search engines, don't bother, as the time it would take outweighs the benefit.

Exactly. No I completely understand doing something of such small significance in terms of jumping ranks quickly, won't do it. These pages are so long tail that the only pages I am not competing with any other pages, because content like this has not been written.
Therefore I want to make sure I have done all of the essential on page techniques (that make sense and add benefit to my users) so that I have a strong position (all else being equal and not including backlinks) in the SERPS.

If you have a picture of a zebra, give it an alt of zebra.
The search engines will then see an image of a zebra and think this is a page about zebras.
Really that is about all there is to say on the subject.
If you have an image which has some text on it like a menu link, give that an alt that reflects the text then the search engine can treat the link in that context.
Don't introduce images just for the sake of ranking, do it for the look and usability factor.
