Zen Cart is good but what makes it great is their forum support. Every problem I've had seems to be solved within a hour.

I too started Zen Cart last spring (2006).. There is a bit of a learning curve, and you cant use GoDaddy and expect the best.. The people on the forum are great and I even got my hosting through one of them (Oh great Merlin).. When I switched from GoDaddy to them my business took off and I was able to finally offer a credit card solution through one of their mods.. They have awesome mods that everyone chips in.. With Zen you can have SEO as well with their title mod.. You can have multiple payment and shipping options ( i have the first class, Priority, Express, and 3 different Global options as well).. There is a cool image enhancer for rollover enlarging effects.. Very flexible templates, and even a live chat add on.. Its free, but after what you get you definitely need to chip in and at least buy them a cup of coffee..

A custom cart is always the best solution...

...if you have the budget! E-commerce site owners always run into issues or need upgrades written into the site before launch and into the future to meet their needs.

Sometimes you can find GOOD programmers who can customize an existing cart. A lot of the canned carts end up running into road blocks in the future and need re-built from scratch to implement all the functionality an e-commerce site needs.

If you have limited needs a canned cart may work but make sure the cart is backed by good tech support!

Personally I like Avactis shopping cart software which handles everything Tom needs. And I like Avactis very clean backend which makes it very easy in use.

Of course, Yahoo also has good ecommerce solutions, but it's very expensive for small businesses.

Use osCommerse carts only if you can modify it yourself and you dont care about transactions, if not its better to buy a cart with tech. support.
First answer following questions:
1) Hosted solution or not ?
2) Major features

We use ecommercetemplate dot com here and so far I'm ok with them, but I think the whole thing may be lacking in the SEO department. Anyone have any experience with them?

Forget it. Nearly everyone who collects CC details on their own site is in breach of their merchant agreement. In order to do that legitimately, you basically need to pass bank grade security tests (I've been through that process). Shared hosting or VPS? forget it! Even a dedicated server isn't good enough - you need exclusive control of the entire rack your commerce server is in, with the rack covered by a security camera. Even the company that does your offsite backups needs to be vetted. There are dozens of points of failure and each one needs to be covered.

Stick to a third-party gateway and let someone else have all the sleepless nights. And if you are in the US and selling physical goods, you are supposed to be doing all transactions as pre-auth, which gives you some leeway for varying the final amount anyway.

Phone orders are easy - you record the details and enter them via the website :-)

Zeuscart is the best open source php-based shopping cart software and I would highly recommend to use this shopping cart software.

I can say "Magento" is more powerful than any shopping cart script and for all your requirements you need to add some custom modules.
You can see in joomla (virtuemart), Zen-Cart, Drupal(Uber Cart) in all these you need some custom programming to achieve all your requirements but out of all “Magento” is more powerful and I suggest it to use its my opinion since last couple of year I am belongs with all this Open Source Scripts.
