You can choose the theme of the ads displayed on your page when you set them up. However I do believe G uses the content and relevancy of your page/site to determine what ads to show. Additionally, the paying advertisers get to opt in/out of the displaying sites if they feel they won't get quality traffic from it.
From your point of view, you will get a much better click through rate (therefore more money in the long run) from ads that are similar to your site's content. A visitor landing on a football site/page is not likely to click on an ad for craft supplies (unless of course that football supporter has a fetish for making pretty birthday cards). But they may well click on a "replica football shirts" ad. A couple of pennies in your pocket is better than no pennies!

Google automatically choose which ads to show on which page. So you can't do much about that. Google Consider many things do decide it like : relevant category of your site, your content, you keywords etc.
